Traditional Kransekake Recipe

Ingredients:

  • 1 lb (450g) almond paste or marzipan
  • 1¾ cups (200g) powdered sugar
  • 3 large egg whites
  • 1 teaspoon almond extract (optional)

For the icing:

  • 1 cup powdered sugar
  • 1-2 tablespoons water or lemon juice

Instructions:

1. Preheat oven to 375°F (190°C). Lightly grease the kransekake rings with butter or cooking spray.

2. In a large bowl, knead together the almond paste and powdered sugar until well combined and smooth.

3. Add egg whites one at a time, mixing thoroughly after each addition. Add almond extract if using. The dough should be thick but pipeable.

4. Transfer the dough to a piping bag fitted with a large round tip (or use a plastic bag with the corner cut off).

5. Pipe the dough into each ring mold, filling them about halfway. The dough will expand during baking.

6. Place rings on parchment-lined baking sheets. Bake for 12-15 minutes until lightly golden and firm to the touch.

7. Let cool for 5 minutes in the molds, then carefully remove and cool completely on wire racks.

8. Make the icing by mixing powdered sugar with water or lemon juice until it reaches a thick, drizzling consistency.

9. Stack the rings from largest to smallest, drizzling icing in decorative zigzag patterns over each layer as you build the tower.

10. Let the icing set before serving. Traditionally, guests break off rings to enjoy.
