Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar, plus extra for sprinkling
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Cream butter and sugar together until light and fluffy, about 3-4 minutes.
- Sift flour and salt together, then gradually mix into butter mixture until just combined.
- Roll dough to 1/2-inch thickness on a lightly floured surface.
- Use your Fox Run shortbread cutter to cut wedge shapes and place on prepared baking sheet.
- Prick each cookie several times with a fork and sprinkle lightly with sugar.
- Bake for 20-25 minutes until edges are just golden. Do not overbake.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Makes approximately 16-20 cookies depending on thickness.
Baking Tip: The key to perfect shortbread is using quality butter and not overworking the dough. The cookies should be pale golden, crisp on the edges, and tender in the center with that signature buttery, melt-in-your-mouth texture.
