Carrot Raisin Bread Recipe:

-2 1/2 Cups sifted flour
-2 tsp. baking powder
-1 tsp. baking soda
-1 tsp. Cinnamon
-1 tsp. salt
-1 Cup grated carrots
-1 Cup Golden Raisins
-1/2 Cup chopped walnuts
-1 Cup packed dark brown sugar
-2 eggs
-1 Cup Milk
1/4 Cup butter or margarine, melted.

Sift together flour, baking powder, soda, cinnamon, and salt. In small bowl, combine carrots, raisins, and walnuts. Toss. Mix in dark brown sugar. In large bowl, beat eggs until foamy. Beat in milk and melted butter. Stir in carrot mixture; add flour mixture. Bake in greased and floured Bundt Pan at 350 F for 50-60 minutes, or until cake tests done. Cool in pan for 5-10 minutes. Turn out on wire rack to complete cooling.
